Sweet Potato Quinoa Pilaf

 

I have an uneasy relationship with sweet potatoes. Depending on how they’re fixed, I really enjoy them, but often I find what I really want is a REAL potato, not this healthy counterpart. This recipe, which I made up on the fly, changed my mind.

  • 1 Tbsp grape-seed or olive oil
  • 1 medium sweet potato, cubed
  • 1 cup cooked quinoa
  • 2 cups kale, torn into small pieces
  • 1/2 tsp cayenne pepper
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • salt to taste

Heat oil in a large skillet on medium heat; add sweet potatoes and season with cayenne, turmeric, and thyme, stirring to coat. Cover pan and cook 10 minutes or until potatoes are soft, stirring occasionally. Add quinoa, kale, and salt and stir to combine, then cover and cook another 5 minutes until quinoa is warm and kale is slightly wilted. Serve hot.
