Stoplight Salad

Yields: 4 servings

2 red Roma tomatoes
2 yellow Roma tomatoes
1 large cucumber, halved and sliced
1 bunch basil
vinaigrette of choice

1. Chop tomatoes into quarters; chop and slice pepper, if using. Mix in bowl with cucumbers and cut basil into bowl with a sharp pair of scissors.
2. Dress with Red Wine Vinaigrette and marinate 30 minutes before serving.
