Spicy Kale

  • 2 tablespoons olive oil
  • 1 bunch kale (lacinato, red, or green)
  • 2–3 cloves garlic, minced
  • juice of 1 lemon
  • cayenne pepper to taste
  • salt to taste


  1. Wash kale and strip from the stem by sliding hand down the stem.
  2. In a large fry pan, sauté garlic in olive oil 1 minute over medium heat.
  3. Turn up heat to medium high and add kale, lemon juice, cayenne, and salt.
  4. Stir and cook for 3–5 minutes until kale is bright green but not wilted.

Variations: Add broccoli, squash, zucchini, red onion, red bell pepper, or sun-dried tomatoes.
