Roasted Cauliflower and Beets with Garlic

  • 1 head cauliflower, sliced lengthwise
  • 3 beets, peeled and sliced thinly
  • 6–8 cloves garlic, crushed and peeled
  • coriander, cumin, salt, & pepper
  • olive oil
  1. Preheat oven to 400 degrees. Line a baking tray with parchment.
  2. Lay cauliflower, beets, and garlic cloves flat on tray so that they don’t overlap. Brush with olive oil and sprinkle with spices.
  3. Roast 12 minutes, until browned and cooked through.
