Purple Cabbage Salad with Ginger Garlic Dressing

Ingredients:

  • 1/2 head purple cabbage
  • 1/2 bunch of cilantro
  • juice of 1 lime
  • 2/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1 tsp grated ginger, preferably with juice
  • 1 tsp minced garlic
  • 1 tsp maple syrup
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Chop cabbage and cilantro and cover with lime juice.
  2. Mix remaining ingredients and pour approximately half over the salad. Serve.

One of the best things about this recipe is that you have delicious, healthy dressing leftover!
