Kale Pesto

Kale pesto is full of essential nutrients like calcium, zinc, and vitamins A, C, E, and K, all made absorbable by the good fat in the olive oil and pumpkin seeds, to insure that you’re satisfied and your body will efficiently use calories rather than storing them.

  • kale leaves from 5–6 stalks
  • 1/2 pumpkin seeds soaked overnight
  • juice of 1/2 lemon
  • 1/3 cup olive oil
  • sage, thyme, and oregano
  • salt and pepper

Blend pumpkin seeds with kale in food processor, adding olive oil as needed to moisten the mixture (you may need more or less than 1/3 cup). Add lemon juice, herbs, salt, and pepper to taste and process until thoroughly mixed.
