Green Apple Signature Salad

This salad was so good I had to name it after my company! It’s got sweet, sour, and salty flavors, and lots of crunch! Best of all, it’s one of the best ways to eat leafy greens. You can add steak, chicken, or shrimp if you like, but I promise, you won’t miss the meat!

Serves 2.

  • 2 cups arugula
  • 2 cups red-leaf lettuce
  • 1 green apple, chopped
  • 1 avocado, sliced
  • 4 Tbsps walnut pieces, toasted
  • 4 Tbsps feta cheese
  • mustard cumin vinaigrette (recipe below)

Wash arugula and lettuce and divide between two bowls. Chop apple into pieces, peel and slice avocado, and sprinkle over lettuce. Add 2 Tbsp each walnuts and feta cheese to each bowl. Top with mustard cumin vinaigrette.

Mustard Cumin Vinaigrette

  • 2/3 cup extra-virgin olive oil
  • 1/3 cup apple cider vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp ground cumin
  • 1 clove garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp pepper

Mix all ingredients. Don’t worry, the vinegar keeps the garlic from making your breath smell bad.
