Balsamic Chicken (or Fish) with Broccoli


  • 2 organic chicken breasts, or 4 thin filets of white fish
    such as tilapia or sole
  • olive oil
  • salt and pepper
  • 3 cloves garlic, minced
  • 2 tsp dried basil
  • 2 large heads broccoli
  • balsamic vinegar


  1. Preheat oven to 400. If using chicken, butterfly breasts and pound to flatten. Arrange chicken or fish side by side in a rectangular baking dish drizzled with olive oil. Salt and pepper each piece of meat, then scatter garlic and basil on top. Bake at 400 roughly 5-8 minutes for fish and 20 minutes for chicken, until cooked through.
  2. Meanwhile, blanch the broccoli by immersing it in boiling water for 2 minutes and removing promptly. Cut into florets. Serve the fish or chicken with broccoli and drizzle everything liberally with balsamic vinegar.
