Asian Salmon

Prep Time: 5 minutes, 1 hour min. marinade time
Cooking Time: 10 minutes
Yield: 4 servings


  • 1/4 cup olive oil
  • 2 shallots, chopped
  • 1/4 cup red wine vinegar
  • 4 Tbsp soy sauce
  • 1/4 cup fresh lemon juice
  • 1/4 tsp cayenne pepper
  • 2 Tbsp fresh ginger, grated (or 1 tsp powdered ginger)
  • 1 tsp ground coriander
  • 4 wild caught salmon steaks


  1. Mix olive oil, shallots, vinegar, soy sauce, lemon juice, cayenne, ginger, and coriander. Pour over salmon and marinate at least one hour, preferably overnight.
  2. When ready to cook, preheat oven to broil. Pour marinade into a saucepan and cook until shallots are soft (about 3 minutes).
  3. Pour cooked marinade over salmon and broil 10 minutes for well done, 5–7 for medium.
