Apple Cider Vinaigrette

  • 1/2 cup apple cider vinegar (unpasteurized if possible)
  • 2/3 cup extra virgin olive oil (organic if possible)
  • 1 Tbsp diced shallot
  • 1 tsp maple syrup or honey
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • a generous pinch of dried arame seaweed (optional)
  • splash of umeboshi plum vinegar (optional)
