Amazing Beets

Prep Time: 10 minutes
Cooking Time: 1 hour
Yield: 6 servings

Ingredients:

  • 1 bunch beets (3–4)
  • 2 cloves garlic, chopped
  • 2 Tbsp fresh oregano (or 1 tsp dried)
  • 2 Tbsp soy sauce or nama shoyu
  • 2 Tbsp umeboshi vinegar or raspberry vinegar

1. Roast beets in skins at 375 degrees, about 45 minutes. Allow to cool about 15 minutes, then peel and slice. (It’s much easier to peel beets after they have cooked.)

2. Saute garlic in olive oil. Add beets, sprinkle with oregano, and season with nama shoyu and umeboshi.
